Chicken Cuts Guide: Which Piece to Buy for Biryani, Curry, Tikka and More

Ordering the wrong chicken cut is the most common mistake home cooks make — and it is rarely their fault. Nobody explains which piece actually works for which dish. This guide fixes that, once and for all.

My name is Mohd Furquan. I run Alizo Foods, a fresh meat home delivery business in Meerut. Every week, customers order chicken for biryani and end up with a cut that does not hold up in a long dum-cook. Or they order for grilling and get a cut that dries out on the tawa. This is not about one cut being better than another — every cut has a job. This guide tells you exactly which one to pick.

The Complete List of Chicken Cuts We Deliver

Here is every cut Alizo delivers, and exactly what each one is meant for — based on how our customers actually use them. You can browse our full fresh chicken range here.

Cut Best For Notes
Curry Cut Biryani, korma, stew, home curries Best for palak chicken, afghani chicken, chicken kali mirch, chicken barra, and similar dishes
Breast Boneless Grilling, roasting, tikka masala Also used in biryani, but not our recommendation for it
Thigh Boneless Chicken tikka, grilling The most premium cut — softer, more tender and juicier than breast. Can be used in biryani, not recommended for curries
Full Leg Roasting, grilling Also works well in biryani (thigh stays attached to the leg)
Whole Chicken Roasting, grilling, BBQ Best for whole-bird preparations
Leg Piece / Drumstick Frying, roasting, grilling, BBQ Also used in curry dishes like korma or stew
Wings Frying, grilling, BBQ Sometimes used in curries, but not our recommendation
Chicken Lollipop Grilling, roasting, BBQ A party favourite — always a hit at gatherings
Mince / Keema Snacks and kebabs Afghani chicken samosa, chicken kebabs, chicken patty, nuggets, chicken kaju keema

Which Cut Should You Order? A Quick Answer for Every Dish

Best for Simple Home Curry

Curry cut is the right choice. It gives you a mix of every part of the chicken in one pack — so everyone at the table gets their preferred piece. Someone who likes leg piece gets it, someone who prefers the meatier breast gets that too. It is exactly what dishes like korma and stew are built around.

Best for Biryani

Curry cut again — and for the same reason. Biryani is best with a mix of bone-in and boneless pieces in the same pot, so every spoonful has a piece someone enjoys. Full leg also works well here, since the thigh stays attached to the leg and holds up through a long dum-cook.

Best for Chicken Tikka, Grilling, and BBQ

Thigh boneless is our top recommendation — it is softer, more tender, and juicier than any other cut, and it holds moisture far better on high heat. Breast boneless is the standard choice for tikka masala, but if you have not tried thigh boneless for tikka yet, it is worth switching.

Best for Kids and Elderly Family Members

Both breast boneless and thigh boneless work well since there are no bones to worry about. For elderly family members specifically, thigh boneless is the better pick — it is noticeably softer and juicier than breast, which makes it easier to chew.

Best for Frying

Drumsticks, wings, and lollipop are made for this. All three hold their shape and crisp up well whether you are deep frying or pan frying.

Best for Snacks and Kebabs

Mince (keema) is the cut to reach for — perfect for chicken kebabs, chicken patties, nuggets, chicken kaju keema, and dishes like afghani chicken samosa.

The Most Common Mistake: Full Leg vs Leg Piece

This is the single most common confusion we see. Customers often use "full leg" and "leg piece" interchangeably — but they are not the same cut.

Full Leg includes the thigh attached to the leg — it is the entire lower portion of the chicken in one piece. Leg Piece (also called a drumstick) is just the lower leg on its own, without the thigh attached.

If a recipe calls for full leg and you order leg pieces instead, you will end up with less meat per piece and a different cooking time than expected. When in doubt, ask us directly — we would rather clarify than have you order the wrong cut.

Does the Cut Affect Freshness During Delivery?

Yes — and this is worth knowing before you order. Bone-in cuts like leg piece and lollipop have a shorter shelf life than boneless cuts. Bone tends to spoil faster than boneless meat, especially in warmer months.

This is exactly why our 90-minute delivery matters more for some cuts than others. Whatever cut you order — bone-in or boneless — it reaches you within 90 minutes of your order, so freshness is never a question either way.

How Much Chicken Should You Order for a Family Gathering?

This is one of the most common questions we get before functions and get-togethers. Here is a simple rule of thumb:

Purpose Recommended Quantity (per 4 people)
Curry or Biryani 1 kg
Grilling or Roasting 1.3 kg – 1.5 kg

The reason for the difference is simple: curry and biryani are eaten alongside roti or rice, so a smaller quantity of chicken goes further. Grilled or roasted chicken is usually the main item on the plate, so the quantity needs to be a bit higher.

Why Do Boneless Cuts Cost More?

If you have noticed that breast boneless and thigh boneless cost more per kilogram than curry cut or whole chicken, that is expected. Boneless cuts require extra time and skill to prepare — every bone is removed by hand — and that additional work is reflected in the price. Curry cut and whole chicken do not need this extra step, which is part of why they are priced lower.

My Personal Pick: The Most Underrated Cut

From the Founder

"My favourite cut is thigh boneless — not just for the softness and juiciness, but because it is also one of the most nutrient-rich parts of the chicken, naturally higher in iron and zinc than breast. It is my go-to for chicken tikka. If you have never tried it, order it once. I don't think you will regret it."

For curries and biryani, I personally stick to curry cut — it is simply the right tool for the job. But for grilling or roasting, breast boneless and thigh boneless are what I reach for. And when I am frying, drumsticks, wings, and lollipop are unbeatable.

Frequently Asked Questions

What is curry cut chicken?

Curry cut is a mix of different chicken pieces — both bone-in and boneless — cut into medium-sized pieces suited for curries and biryani. It is the most versatile cut since it gives every family member their preferred piece in one pack.

What is the difference between full leg and leg piece?

Full leg includes the thigh attached to the leg — the entire lower portion of the chicken. Leg piece (also called drumstick) is only the lower leg, without the thigh. They are commonly confused but are two different cuts.

Which chicken cut is best for biryani?

Curry cut is the best choice for biryani, since it combines bone-in and boneless pieces in the same dish. Full leg also works well because the thigh stays attached and holds up through a long dum-cook.

Is thigh boneless or breast boneless better for chicken tikka?

Thigh boneless is the better choice — it is softer, more tender, and juicier than breast, and holds up better under high heat. Breast boneless is more commonly used for tikka masala, but thigh boneless is worth trying for a noticeably better result.

Which chicken cuts spoil faster?

Bone-in cuts like leg piece and lollipop have a shorter shelf life than boneless cuts, since bone tends to spoil faster than boneless meat. This matters most in warmer months. Our 90-minute delivery ensures every cut — bone-in or boneless — reaches you fresh.

How much chicken should I order for a family function?

For curries or biryani, plan for 1 kg per 4 people. For grilling or roasting, plan for 1.3 to 1.5 kg per 4 people, since grilled chicken is usually the main item on the plate rather than a side to rice or roti.

The Bottom Line

Every chicken cut has a specific job. Curry cut for your everyday curry and biryani. Thigh boneless for the best tikka you will ever make at home. Drumsticks, wings, and lollipop for frying. Mince for kebabs and snacks. Get the cut right, and the dish takes care of itself.
